Peanut Butter Popcorn Recipe

Two of my favorite foods are peanut butter and popcorn so naturally I wanted to see if there was a way I could combine them together. There are many recipes for peanut butter popcorn but the one I finally settled on uses a peanut butter caramel topping that not only adds flavor but a great texture as well.

This peanut butter popcorn recipe is also pretty easy to follow. It simply is a simple caramel sauce with peanut butter stirred into it. That sauce is then added to freshly popped popcorn. That's all there is to it!

You can also take this simple peanut butter popcorn recipe and add your own flourishes to it. It is great with different garnishes such as honey roasted peanuts or cashews. It is also good with additional flavorings such as cinnamon. You can also just drizzle some melted chocolate over the top for a fantastic snack!

Peanut Butter Popcorn Ingredients


For the Peanut Butter Caramel Topping

1/2 cup sugar
1/2 cup honey
1 tablespoon water
2/3 cup natural peanut butter
1/2 teaspoon vanilla

For the Peanut Butter Popcorn

8 cups popped popcorn
1-1½ cups peanut butter caramel topping
Salt, preferably kosher or sea salt

Peanut Butter Popcorn Instructions


For the Peanut Butter Caramel Topping

Warning: Melted sugar is *very* hot and can cause burns, only an adult should do this. Be sure to use a large enough pot because the mixture can boil and expand. If you have any concerns please use a bottled caramel sauce.

Mix the sugar, honey, and water together in a large pot, it should resemble sticky wet sand. Heat the pot over medium heat without stirring until the sugar mixture melts. Once it starts to brown stir it gently until it turns a light amber color. If clumps form, cook for longer until they melt, almost all clumps should eventually melt out.

Once the sugar is a light amber color, about 5 to 10 minutes total cooking time, stir in the peanut butter and vanilla. Mix well until the mixture stops bubbling. Remove from the heat and set aside but do not let it cool too much or it can set.

For the Peanut Butter Popcorn

To finish the peanut butter popcorn, mix together the peanut butter caramel topping and the popcorn. I usually put some popcorn in a bowl then spoon some peanut butter caramel over top. I sprinkle a little salt then add more popcorn and peanut butter caramel topping. Repeating until the bowl is filled with peanut butter popcorn.

Use a spoon to finish mixing the peanut butter popcorn. You can eat the peanut butter popcorn as soon as it is cool enough to handle or you can usually store it for several of days in an airtight container.
